Pineapple Sorbet

Adam loves pineapple.
It's his favorite fruit.
Soo when I saw this recipe, I knew he would love it!
I mean it was reallyyy tasty.
If you don't believe me, I have a picture to prove it.
Seeee, I told you he loved it!
No but seriously, this sorbet tasted like ice cream.
It was so rich & creamy.
&&&
It doesn't have any milk or eggs!
Oh & it's actually pretty healthy!
We made it in our new soft serve ice cream maker.
I think we need to practice with it a little more though.
It wasn't coming out the right way haha
Oh well! As long as it tastes yummy right!?
Well I think you should make this.

Pineapple Sorbet
By: David Lebovitz

Yields: 3 cups of sorbet

Ingredients:
1/2 pineappple (2 C), peeled & cored
8 T. granulated sugar (I used 5 T. agave instead)
1/2 C. water

Directions:
Cut the pineapple into chunks & puree in a blender with sugar & water.
Mix until smooth.
Chill the pineapple mixture in the fridge for at least 1 hour.
Freeze in your ice cream maker!
Scoop & indulge!

It went pretty fast...Might have to make more!

Roasted Jalapeño Hummus

I look at a ton of food blogs everyday.
I also bookmark a ton of recipes.
This past week I tried to go through & make some of those recipes.
I think I only made it through about 5.
Now I only have about 150 more to try!
This jalapeño hummus was one of my top priorities.
I absolutely love hummus.
&&&
I absolutely adore jalapeños.
Therefore, I just HAD to make it!
Plus it was my first time to ever make homemade hummus.
I have to say...
It was a complete success!
Although this recipe is a bit on the spicy side.
So if you don't like that, I wouldn't try it!
Anyways, here is the recipe!

Roasted Jalapeño Hummus

3 tablespoons lemon juice (approx 2 lemons)
1/4 cup water
6 Tbsp Tahini
4 Tbsp olive oil, divided
1 15-oz can of chickpeas, drained and rinsed
3 garlic cloves, peeled
1/2 teaspoon course salt, plus more to taste
1/4 teaspoon cumin
dash of cayenne
3 jalapeños

Place top oven rack 4 inches from the broiler and turn on the broiler.
Remove the stems from two peppers and slice horizontally into quarters. 
Do not remove pith or seeds.
Toss the pepper with the olive oil and place into a small oven-safe dish. 
Broil until blistered and softened.
Remove from oven and allow oil and peppers to cool completely. 
Reserve the oil - you'll drizzle it over the hummus before eating.
Combine the lemon juice and water in a small bowl. 
In a separate bowl, whisk the Tahini and olive oil together until smooth.
Process the chickpeas, garlic, salt, cumin, and cayenne in a food processor until almost fully ground, about 15 seconds. 
Scrape down the bowl.
With the food processor running, stream in the lemon and water and process for one minute. 
Scrape down the bowl again.
Turn the food processor on and stream in the Tahini and oil mixture and process until smooth, about another minute.
Add the jalapenos (reserve the oil) and process another minute.
Transfer the hummus to a bowl, cover and refrigerate for an hour to let flavors blend. 
Sprinkle with a pinch of sea salt and drizzle with the reserved oil. 
Top with jalapeno slices from the remaining pepper. 
Store in an airtight container in the refrigerator for up to 7 days.

    I've been working on doing videos again since I'm on a hiatus for four weeks. Most recently I've revamped Sheridan's video for her blog post "Eternally Times Eternally" back in May as well as the "Dodgers Date Night". Just switched a few things around and made it possible to be viewed in crisp HD. I figured if The Bold and the Beautiful can go to High Definition, why can't we?? Ratatouille

Adam and I had a little date night.
It involved cooking, eating & watching Ratatouille!
It was one big night of ratatouille.
Yes, I am that cheesy.
I plan dates around disney films & cook the food in it.
But ya know what?
It was adorable!
&&&
We loved our little date night! :)

Here is a simple recipe that ANYONE can make.

*Ratatouille*
Ingredients:
2 small zucchini, sliced
2 small yellow squash, sliced
3 tomatoes, sliced
1 skinny eggplant, sliced
1 jar of your favorite pasta sauce
Italian seasoning

Directions:
Heat oven to 350 F.
Arrange the vegetables in a rotating order, layered in an 8x8 baking dish.
Pour sauce over the top of the layered veggies & sprinkle with italian seasoning for garnish.
Bake for 45-60 minutes, or until the vegetables are easily pierced with a fork.
Remove dish from oven & let cool for a few minutes.
Serve & enjoy!

Zucchini Cake with Cream Cheese Frosting! :)

I love zucchini.
It's so healthy!
Of course I always ruin that.
I end up putting it in cakes.
But man oh man is it delicious!
This cake was literally devoured within minutes.
I was shocked.
Who knew other people shared my love for zucchini!
This cake literally was to die for.
You will definitely swoon when you taste it.
Heck, I was even swooning over it while it was in the oven.
It makes your house smell absolutely amazing!
Oh & the cream cheese frosting on top.
Words can't even describe it.
It is just THAT good!
Be warned though.
You will have too much cream cheese frosting.
&&&
You will be forced to eat it.
I put the excess in graham cracker sandwiches & froze them.
Adam is eating one right now.
Scrumdidileumptious!
Now enough of my ranting.

Zucchini Cake
Adapted from: My Madison Bistro

1 C. granulated sugar
3/4 C. canola oil
2 egg whites
1 1/2 C. shredded zucchini
1 C. white wheat flour
1 t. baking soda
1 t. baking powder
1 t. ground cinnamon
Dash of salt

Heat oven to 325 F.
Spray an 8x8 pan with cooking spray.
Sift flour, baking soda, baking powder, cinnamon, and salt into medium bowl.
In a large bowl, beat sugar and oil with a handheld mixer until blended.
Mix in eggs, then zucchini and blend well.
Add flour mixture to sugar, beat until combined.
Pour batter into pan.
Bake for 40-55 minutes or until cake tester comes out clean.
Cool on a wire baking rack.
Frost with cream cheese frosting.
Demolish it!

Cream Cheese Frosting

8 oz. low fat cream cheese, softened
1/4 C. unsalted butter, softened
1 1/3 C. confectioner's sugar, sifted
1 t. vanilla extract
Dash of salt

Beat butter & cream cheese together with hand mixer until combined.
Reduce speed & slowly add sugar.
Add vanilla & beat until mixed.
Then add a dash of salt & mix once more.
Frost your cake!

Dodger Double Date Night! (Hubby Guest Post!)

Dodger Double Date Night!
(Hubby Hijack Post...)

    Saturday night has become our unofficial Double Date since Mr. Adam Kaiser came into the picture with our sister Mekenna. Same name as me and CRAZY confusing, I know. So we just call him "Shoe" (Long story involving our niece Andelyn for another time). I haven't been to a game like this in a while and had a blast! It was a gripping game against the Washington National's and we were behind the whole game until the bottom of the 8th and tied the game! The Dodgers held the Nationals for the top of the 9th then the Dodgers hit a walk off double to clench the game! OH, and Andelyn spilled her soda all over the guy in front of us HA! He was not a happy camper even though Mekenna offered to dry clean his shirt and bought him a new Dodgers shirt (He was so angry he didn't take it, let alone speak after that...). Here is a video and some pictures from our night! Enjoy!!

Brown Rice Horchata

I can't wait to go to Mexico in a week & a half!
I desperately need a tan.
This whole vampire look clearly isn't working anymore.
It's okay though.
I will have a whoooole week to get my tan on!
& I get to spend time with my hubby, my brother & my momma.
Yay for family time! :)
Well...in honor of us going to Mexico.
I made a Mexican inspired meal last night!
We had jalapeno lime chicken with a yummy cream cheese sauce.
Anddd...we had BROWN RICE HORCHATA!
Mmmm. I adore horchata!
I never even thought I would be able to make it here at home.
Well guys, my dreams came true!!!!
& it literally could not be easier to make!
You all MUST try it!
It is a dream.
Literally.

*Brown Rice Horchata*
Found on: Gina's Skinny Recipes

1 C. rinsed brown rice
4 C. water
2 cinnamon sticks
1 C. light vanilla soy milk
1/3 C. agave
1 t. vanilla extract(I used mexican vanilla)
1/2 t. ground cinnamon, plus more for topping

Soak the rice in the water overnight with cinnamon sticks.
The next day, throw out cinnamon sticks & blend the rice water in a blender at the highest speed for 5 minutes (I used my vita mix & only blended for 3 min).
Pass through a mesh sieve 2 times to catch the rice pulp.
Throw away strained rice pulp.
Pour into a pitcher and add milk, agave, vanilla & mix well.
Refrigerate until ready to serve.
When ready to serve, pour into glasses & sprinkle cinnamon on top & enjoy!

A Mean Green Smoothie!

This is my go-to smoothie recipe!
I drink it ALL the time.
When I am lacking energy, I make one of these.
It gives me so much energy & it is super healthy!
You can always add more fruit or different fruit as well.
Don't be afraid of the color though.
It tastes fruity & delicious I promise!

*A MEAN GREEN SMOOTHIE*

1 medium banana
5-6 strawberries
3/4 C. kale
3/4 C. spinach
1-2 T. chia seeds
A squeeze of agave (to taste)
1 C. water
1/4 C. vanilla soy milk (whatever milk you desire)
1/2 C. ice

Place all of the ingredients into a blender.
Blend until smooth.
Pour into a glass & enjoy!

Sweet Potato Fries, Cowboy Burgers & Our Insane Dinner!

Yesterday was a day full of food.
Literally, I can't remember the last time I ate that much!
It started off with mine & Adam's yummy lunch.
I made sweet potato fries & Adam grilled some burgers for us.
I have an obsession with sweet potato fries.
I also have been craving red meat (I can't remember the last time I ate it)
I think I'm anemic.
Soo we grilled up some burgers!
I had never made sweet potato fries before so it was an experiment!
They didn't turn out as crispy as I had hoped but I think I found the solution.
Here they are!



Now we'll move onto our delicious dinner...
Our friend Roel, from Holland, cooked us all dinner last night.
He is a legitimate chef.
Yes, he works in a restaurant!
We started off the evening with a salmon tartare.
I forgot to take a picture of that...Sorry!
Then we moved onto this yummy steak & potatoes & veggies.


After we demolished this, we moved onto dessert!
Which is always the best part of the meal in my opinion :)
Sorry the picture isn't all that great.
It was in a bowl and I couldn't get a good angle on it!


This key lime pie was the best one I have ever tasted!
It was creamy & dreamy & just wonderfully delectable!!!
Haha but no seriously, it was beyond good!

If you would like to make the sweet potato fries...here is the recipe.
The seasoning is extremely flavorful!
If you aren't keen on spices though, halve the cayenne, chili & cumin.

*BAKED SWEET POTATO FRIES*

2 large sweet potatoes
2 t. chili powder
1 t. garlic powder
1/4 t. cayenne powder
1/2 t. ground cumin
1 t. kosher salt
1/2 t. ground black pepper
2 T. cornstarch
2 T. olive oil

Preheat oven to 450 F.
Mix chili powder, garlic powder, cayenne powder, ground cumin, salt & pepper in a small bowl.
Wash/scrub sweet potatoes & dry them well.
Cut potatoes into 1/4 inch pieces, trying to make them all around the same size.
Place sweet potato into a large bowl.
Add cornstarch & mix really well.
Add olive oil & mix really well again.
Pour seasoning over potato mixture a little at a time & mix in between each pour.
Spray 2 cookie sheets really well with cooking spray.
Place half potato mixture on each & make sure they aren't crowded.
(If they are too crowded, they will steam each other)
Bake for 25 minutes, checking on them every 10 minutes to flip over fries.
(Cooking time will vary depending on how thick your fries are)
Remove from oven & enjoy!

Healthier Kung Pao Chicken

This was delicious!
I am so glad that I decided to try it out.
I changed up the recipe a little bit to make it more healthy though.
That means there is no breading & frying!
I highly recommend you try this yummy spicy dish.
Oh, and if you don't like/can't handle spicy.
Just eliminate the cayenne & you should be okay!

*KUNG PAO CHICKEN*

Ingredients:
1 lb. boneless, skinless chicken breasts (1-in. pieces)
2 t sesame oil
3 T chopped onions
1 C chopped carrots
1 C chopped broccoli
3 garlic cloves, minced
1/2 t red pepper flakes
1/2 t cayenne
1/2 t ground ginger
1/3 C cashews

Sauce:
3 T rice vinegar
3 T soy sauce
2 t sugar
1/2 t cayenne
1/2 t red pepper flakes
1/4 t ground ginger

Instructions:
Place all ingredients for sauce in a small bowl & stir to combine.
Pour sesame oil in large frying pan or wok.
Cook chicken until no longer pink inside.
Remove chicken from pan & place aside.
Add onions, carrots, broccoli, garlic, red pepper flakes, cayenne, & ginger to pan.
Cook until carrots & broccoli become tender.
Add chicken & cashews to the veggie mixture & pour sauce over the top.
Stir & let simmer for a couple minutes to let the flavor soak in.
Remove from heat & serve.
Enjoy!!!

Yay for dates!

Yesterday was a day full of dates! We had a day date with Jantzen & Mia and went and saw Harry Potter! In case you guys didn't know, I have an obsession with Harry Potter. Loved the books & absolutely loved the movies! Which is rare for me to love both. After our day date, we went on a night date with Kenna, her Adam, Samantha & Roel to dinner & then to the Santa Monica Pier! Haven't been there in ages!

Vitamix!

Great news everyone! We finally got a vitamix today!!! Woohoo! I have wanted one for soo long & we finally decided to suck it up & just get one! I already made that raw strawberry milk I was telling you all about. No lie, it was more like a strawberry smoothie but it was really tasty & only has 4 ingredients! I suggest you all go and make this cause it was a perfect way to cool off after a day out in the sun. Hope you enjoy! xoxo <3




Raw Strawberry Milk
* 2 C frozen strawberries
* 2 C water
* 2 T chia seeds
* 2 T agave or honey

All you have to do is put all of the ingredients in a high speed blender & blend together! If you want a more "milky" flavor, simply replace the water with some almond milk! :)

RAW.

For the past week, Adam & I have been on a juice cleanse/raw diet.
Sounds insane, I know.
And nooo, it isn't to lose weight!
I am so tired of people asking me that!
We did it for health purposes.
I am extremely into health&nutrition these days so I thought I should cleanse!
Anyways...
We did a pure juice cleanse for the first 3 days.
Now we are just eating pure raw foods.
Surprisingly we haven't really felt hungry this whole time.
Sure we crave normal food but we are craving healthy food.
Which I think is the whole point of this cleanse!
Before last night, we had only eaten fruits, veggies & nuts the entire time.
Then last night we decided we wanted something different.
Soo we yelped it & found a little place called LifeFood Organic.
It's a raw&vegan cafe!
We went to check it out & grabbed quite a few things to try!
We ended up taking home these beauties...

We also got a green drink & a raw strawberry milk.
The strawberry milk was to die for!
I immediately got the recipe & will be making it to post soon.
Moral of the story?
This place was really delicious!
(it's insanely expensive though, won't even tell you how much we spent :))
If you ever feel like eating raw/vegan/healthy food.
You must try this place out!!!

Shrek-The Musical

Adam and I had the opportunity to go to opening night of Shrek tonight at the Pantages. Let me just tell you...it was ADORABLE! I loved it so much & I'm pretty sure everyone else did too cause there was non stop laughing! If you have the opportunity, you should definitely go see it!
