RECIPE: Chocolate Chip Cookie Pie (Healthy)

This is amazing. I'm not even kidding you, I think I would take this over a normal cookie pie. I was superrr hesitant to try it at first because if you'll look below, you'll see the weird ingredients it's made out of. Please don't be freaked out though! I promise that this is an incredible dessert! Warmed up with a bit of frozen yogurt on top is absolutely killer! But even just plain, it tastes like delicious chocolate chip cookie dough. So if I were you, I'd go make it. Guarantee no one will even know what's in this delicious ooey gooey cookie! Chocolate Chip Cookie Pie

Ingredients:
    •    2 cans white beans or garbanzos (drained and rinsed) (500g total, once drained)
    •    1 cup quick oats
    •    1/4 cup unsweetened applesauce
    •    3 T canola oil
    •    2 tsp pure vanilla extract
    •    1/2 tsp baking soda
    •    2 tsp baking powder
    •    1/2 tsp salt
    •    1 and 1/2 cups brown sugar (*Katie's Note: Seems like a lot, but this makes a big pie. I think we got like 20 servings from it! You can try adding less, if you’re used to healthy desserts; I chose to use this much because the people to whom I served it are used to “normal” desserts. Also, white sugar will work if you don’t have brown.)
    •    1 cup chocolate chips (& a few extra for sprinkling on top before baking!)

Directions:
Blend everything (except the chips) very well in a food processor. Mix in chips, and pour into an oiled pan (I used a regular sized pie pan), then sprinkle a few more chocolate chips on top. Cook at 350F for about 35 minutes. Let stand at least 10 minutes before removing from the pan. Enjoy!

  1. I love chocolate covered katie, and I even have this recipe bookmarked, but like you, I'm hesitant to try it just because beans in a dessert sounds a bit strange. Glad to know it's delicious...I'll definitely have to make it soon!

    1. Yeah, I was the same way! But it really is delicious! Just don't judge it until after you make it cause before cooking it seems a bit weird! :)

  2. Hmmm, I'm definitely intrigued by this one. I tried the black bean brownies awhile back and they were a huge flop. I don't care what others say, you can definitely taste the beans in those brownies. However, I've tried out the dessert hummus before using chickpeas and it really did taste like a dessert. I'm totally going to give this pie a try. Chocolate COvered Katie has never disappointed me before, and I have a feeling she won't this time either :) Thanks for the recipe

    1. You definitely won't be disappointed! I haven't tried the black bean brownies but after this cookie pie is baked, you can't tell that it is made out of beans one bit! Thanks for reading! :)

  4. So I tried these this weekend and took them to a cabin up in Jackson Hole. Everyone loved them, no one could believe what was in them! Good call girl.

  5. We were really skeptical about trying this because, like most others, we were apprehensive about putting beans in dessert. BUT it came out amazing! No one had a clue there were beans in it! (notice I say "were" - it's all gone already)

    The best part is that if you cut it into 12 pieces, you get about 3g of protein and 2g of fiber per slice. So good! And we're definitely going to be making this again!
